0.7 oz of sugar
5 oz of dark chocolate
0.7 oz of butter
French sea salt
Melt the chocolate and butter in a bain marie. Let cool.
Separate the yellows from the whites. Whisk the egg whites with a pinch of salt. Then at the last minute add the sugar and whisk.
Pour the yolks into the chocolate, stirring vigorously.
Gently fold in the snow white chocolate. Mix gently with a spatula, avoiding breaking the egg white.
Pour your sparkling chocolate into small jars. Keep cool for at least 4 hours.
