Ingredients

8 oz of flour

6 oz of sugar

1 lemon

Preparation

In a bowl, beat together the whole eggs and the sugar until the sugar is completely melted.

Add the flour, salt and sifted yeast together, the grated zest of the well washed lemon and the melted butter.

Butter the plates of madeleine molds with a brush, sprinkle them with flour and shake them to remove the excess.

Using a piping bag or a teaspoon, fill each mold 3/4 full.

Let the madeleine dough rest for 20 minutes in the fridge.

Meanwhile, preheat the oven to 410 ° F.

Once the oven is hot, bake at 410 ° F until the bump is well formed and then lower the oven to 375 ° F to finish cooking. Cooking takes approximately 8 to 10 minutes depending on the ovens.
